Hi dear foodies!
My name is Lena Ropp. I am a Living Foods Chef, Raw vegan Lifestyle Coach, Recipe Developer, Food Stylist, Educator and Author based in Costa Rica.
I am passionate about sustainable lifestyle and empowering people to achieve their health goals.
I realized the importance of living sustainably and believed in the power of plants when my whole family transitioned to plant-based lifestyle in 2014.
With ample time to experiment in the kitchen and in the marketing field, after giving up our life of convenience in Southern California – inspiring people to live sustainable is became an expression of my soul. I believe that through the knowledge and the right tools anyone can achieve a sustainable healthy lifestyle. It has now become my life’s mission to share with others through my retreats and ebooks the years of education and experience of fully thriving on plants, regenerating soil and growing lush food forest.
I am currently rooted in our beautiful sanctuary W I L D E R Costa Rica, where I live my dream life with my family on 30 acres of pristine rainforest with 2 creeks and three waterfalls flowing through it and a lush food forest. We were called here in 2016 and finally moved in April 2022 to follow our passion to regenerative living, to develop our food, water and solar energy sovereignty, to thrive of the abundance of our land, growing and harvesting our food and to live simply and holistically. We planted hundreds of fruit trees, currently planting medicinal plants and an abundant vegetable garden. We are aiming to grow most of what we eat and walk each step with love and care for ourselves and Mother Nature.
My greatest passions are the love of nature, plants, animals, mushrooms, raw foods & art creations, and sharing everything possible, including meditations, yoga, hikes, juices, tea and jungle seed-to-table living cuisine experiences. I enjoy creating living cuisine deliciousness full of color and flavor with fresh, our garden grown and locally sourced ingredients.
I live my passions, work for myself and embody life that I truly live to my fullest potential. I’m happy to live my dreams every day, cultivating self-love and taking care of The Earth and my family. I paint my life with beautiful moments and cherish the simple pleasures. I choose to leave the Planet better than I found it – to leave it thriving for our kids and the future generations to come.
My whole family is fully plant-based including kids, my husband and my mom. There are three generations living under one roof and enjoying altogether this lifestyle.

I run raw living cuisine classes, host retreats, cater private events, and coach clients around the world to help them become more energetic, radiant and vibrant.

Through the intersection of raw vegan food and culinary education, I continue to share my passion for helping to achieve health goals, starting in the kitchen.

🇰🇿 I’m from Kazakhstan, where one of the world’s most beloved fruits, APPLES, originated.
☀️ I speak two languages: Russian and English. And I’m learning Spanish little by little.
👩👩👧👦 I’m a mom of three little heroes: Teya, Leonti and Elia, and also have two step daughters. Love them all with all my heart.
💗 My husband @seasropp and I are chasing our dreams and building WILDER, the regenerative center in South Pacific Costa Rica 🦋
🐾 Our puppy @bordercollie_zephyr has green smoothie every single day. And he loves apples and watermelons as much as we do!
🤓 I have a marketing degree, worked as a Marketing Specialist and flew all over the world organizing corporate events, then founded a Wedding Planning Agency, which was thriving for 10 years. Gorgeous chapter in my life 🌸
🌊 I moved to sunny California in 2011 and to Costa Rica in April 2022

🥂 I haven’t had a sip of alcohol since September 2019. And these have been the best years of my life! Freedom in its purity!
🔮 I do all my beauty routine myself and save so much money for my family—all goes to those exotic fruits! But we treat ourselves monthly with massages
🎀 I don’t like shopping! Stores, crowds, lines all make me very uncomfortable. I very occasionally buy sustainable brands clothing, but mostly I wear what I have for many many years.
🌳 My fav color is green! Maybe that’s why green juices and overloaded green salads make me the happiest! And I’m thriving on them every day!
♐️ I’m a Sagittarius and it tells a lot about me: all my dreams come true!

I’m confused about the recipe for the raw cheesecake with persimmon topping.

The photo looks like the persimmons were blended with the other two ingredients, and further instructions say to put extra persimmon pieces on top. But I’m not seeing that specifically in the instructions. Seems to just be missing. Could you give me more info on the filling prep? Does it need to be chilled? Anything else that I need to know? Thanks!

Hey Cat! Thank you so much for reaching me. I actually would recommend to ad 3-4 persimmons to the filling, it will add flavor and volume to the cake. And top the cake with more persimmons, seeds and any berries you like.
